Deer farms in New Zealand are an excellent example of sustainable livestock farming. The sector scores exceptionally high in terms of animal welfare. Thanks to the mild climate, deer can remain outdoors year-round on large, often hilly grass pastures. They live in herds and feed mainly on grass, clover, and herbs.
Venison is tender, very lean, dark in color, and has a mild game flavour. Most deer are slaughtered at an age ranging from 12 to 18 months. The carcasses then weigh approximately 55 kg.
The meat is available year-round, both fresh and frozen.
