Bresse chicken is considered the Rolls-Royce of chickens.
As the name suggests, this chicken comes from the Bresse region in France.
This poultry’s excellence has been officially recognized since 1957 under the registered designation of origin (AOC – Appellation d’Origine Contrôlée) and is currently recognized by the European protected designation of origin (AOP – Appellation d’Origine Protégée).
The Gauloise Blanche breed is a true slow-grower. You can recognise these chickens by their long blue legs, white feathers, and large red comb. They are raised on small-scale farms with a minimum outdoor space of 10 m² per bird.
The feed given to these chickens, consisting of grains and dairy products, must also originate from the Bresse region. During the final two weeks before slaughter, the chickens are fattened with a protein-rich yogurt and grain blend. This promotes fat development, which significantly enhances the flavor.These chickens become a minimum of 120 days old.
