The Barbarie duck, also known as the Muscovy duck, is produced almost exclusively in France. This duck typically has white to black-and-white plumage, with thick red skin around the eyes and beak. Like other ducks, it is housed in barns with litter bedding.
Most Barbarie ducks in France are found in the Vendée region. A distinctive feature is that the canards (male ducks) grow to nearly twice the size of the canettes (female ducks).
The Barbarie duck is definitely a slow-growing breed. The meat has a dark color, a slightly stronger flavor, and is leaner, making it highly appreciated in fine gastronomy.
Naturally, the price of Barbarie duck is significantly higher than that of Peking duck. This is due to the slaughter age, as Barbarie ducks grow older and therefore eat more over a longer period. The slaughter age varies between 10 and 12 weeks. Oven-ready, the canards weigh approximately 2.5 to 3 kg, while the canettes weigh between 1.5 and 1.7 kg. Both male and female ducks are available whole, as well as in cuts, fillet, or leg (cuisse).
